Back to the Cookery Studio now for Welsh Cakes...

Again recipes vary from family to family.
This is the recipe that my Sister-In-Law uses and they are delicious!.
She spreads them with Welsh Butter before serving.....

WELSH CAKES

INGREDIENTS:
1lb Self-Raising Flour 8oz Margarine 6oz Sugar 3oz Currants or Sultanas 2 Eggs A Little Milk Pinch of Salt

METHOD:
Sieve FLOUR and SALT into a mixing bowl.
Cut up MARGARINE and rub in with the fingertips until the mixture resembles fine breadcrumbs.
Add SUGAR and FRUIT and stir in BEATEN EGGS. Mix to a stiff dough. Add a Drop of MILK if necessary.
Place on a floured surface, knead lightly and roll out to ¼ inch thickness.
Cut with a fluted 2 inch pastry cutter.
Cook on a pre-heated, lightly greased planc (griddle) over a slow heat until golden brown on both sides.
Cool on a wire rack.
Serve Fresh.

Prickles <3

Well I am now very emotional having watched the ONLY BOYS ALOUD Audition version ..... yet again!

It is Our Prickles favourite. She has not been well for a while.

Thank you Jem...... tearful at the Tredegar Male Voice Choir and had goosebumps with the youth group!! Need to find the tissues I think.

We always had home made Welsh cakes and Bara Brith (with lots of best butter..... a real treat) for tea on St David's Day. I still make the Bara Brith from Mum's recipe and it brings back many happy memories.
